Creamy Sundried Tomato Chicken

Tonight, I wanted to try something different, filling and creamy for dinner. This would be the perfect meal to cook for a group of friends or for your significant other. Its easy, tasty x doesnt require much prepping!

I went ahead and prepped my red potatoes. Boiled my water, washed my tators and threw them in the water

Afterwards, I seasoned my chicken thighs (remember they are WAYYY more flavorful than breasts!) And allowed to sit for a few minutes. [BRINE, if you have time….more about this later]

Often times, people make the mistake of not allowing your pan x oil to get hot enough before throwing in your meat. Big Mistake. Allow enough time so that it will cook thoroughly.

Cook chicken thighs for 3 minutes on each side [You dont want it fully cooked — itll finish in the over]

Place in pan as they finish … Ughhh, Im sooo excited. My mouth is watering!

Keep the excess oil from the chicken, add cherry tomatoes, red pepper, garlic x sundried tomatoes.  Allow to cook down before adding broth.

Lower heat. While that is simmering. Check on potatoes. Remove from heat, drain x place in bowl.

Add cream x broth… bring to a simmer before added FRESH parmesan cheese (grated Kraft cheese will not break down properly… it has to be fresh!)

After the sauce boils, add in parmesan cheese slowly x stir. After it starts to melt pour mixture over chicken. Top with parmesan cheese, dried parsley, basil x oregano. Cover with foil and bake for 20-30 minutes or until chicken is cooked thoroughly.

Finishing Tators:

While I wait for that to bake. Im going to work on my tators. Season them down with parsley, dried basil, salt, pepper, onion powder, garlic powder x a shake of chili powder. Add a bit of Ranch x heavy whipping cream (2-3 tablespoons of both or your desired consistency). Mash with a fork or tator masher. 🙂

P.S. I know im supposed to “plate” my food..but im always too lazy to use real plates unless I have company lol. Same ole girl… im just bloggin’ now. Ill get fancy soon.
